Here’s what you will need:
For the crust-
- 3/4 cup gluten-free oats (rolled)
- 3/4 cup raw almonds
- 1/4 tsp sea salt
- 2 Tbsp organic sugar or coconut grated
- 1/4 cup melted coconut oil
For the filling:
- Cornstarch 2 Tbsp
- 1/3 cup organic sugar
- A pinch of sea salt
- 1.5 cups plain almond milk
- Slices of 1 ripe banana
For the whipped cream
- 14-ounce coconut cream (refrigerated overnight)
- Half tsp vanilla extract
- 5 tbsp organic sugar powder
For the topping you will need:
- Coconut Whipped Cream
- 2 ripe bananas sliced
How to make it?
- Preheat oven (350 degrees F or 176 degrees C)
- Apply some oil to a pie dish or you can use parchment paper on a baking dish.
- Blend oats, almonds, salt, and sugar for a fine mealy texture.
- Add melted coconut oil to the mix. You can add some oil if it feels dry
- Mix it until it becomes a flexible dough. The dough shouldn’t crumble.
- Place the mixture into the pie pan or baking dish and spread it over the dish even manner.
- Put the parchment paper on the top of the dish. Press down to evenly distribute the dough until it sits well in the dish.
- Bake for 15 minutes. Increase the temperature to 375 degrees F. Look for golden brown edges. Let it cool off.
- For the pudding, add cornstarch, sugar to a saucepan with almond milk and whisk it. Make sure there are no lumps.
- Over over medium heat. Keep whisking it. Reduce the heat and continue to cook for 6 minutes. Keep scraping the sides and bottom with a spatula.
- Once you see the texture is flowy and smooth as you drizzle, remove the heat. Add vanilla and whisk it. Let it cool down for 10 minutes. Place the pudding in a ceramic or glass bowl and put a plastic wrap on the top of the glass. Put it in the fridge for about 3 hours.
- Whip the coconut cream for a minute and add vanilla extract and 3 tbsp of powdered sugar. Now whip it again until it is light and fluffy for 3 minutes.
- Put it in the refrigerator for about 30 minutes.
- Add the gel-like cold pudding to the whipped cream and stir it. Put it in the refrigerator for up to 30 minutes or keep it overnight.
- Add the banana slices to the baked crust and then on the top of the custard and whipped cream. Let the pie sit in the fridge for about 4 hours now. Take it out and serve with additional whipped cream and banana slices, if you like!
